JRC Chef Neil Lindenmayer recently led a cooking class. The students made such culinary delights as mini veggie pizzas, chocolate covered strawberries, and oatmeal/raisin cookies.

This cooking course is eight weeks long and classes are held once a week on Wednesdays for an hour and fifteen minutes. The completion of the course earns the student 1.5 credits toward their high school graduation.

The curriculum is based on a skill set that includes the preparation of fresh vegetables and fruits. Students learn to wash, peel, dice and slice, sauté, bake and steam and each week build upon the previous week's lessons.

Students are encouraged to work both individually as well as in groups to foster confidence and teamwork.

The current program features recipes for raw vegetable crudités with dipping sauce, Mexican beans & rice, baked vegetable spring rolls with fried rice, bean & cheese enchiladas with fresh pico de gallo and tortilla chips, fresh fruit salad melon “baskets” with spiced honey & yogurt sauce, individual pizzas with antipasto salad, whole wheat penne pasta with three herb pesto puree and oven roasted cherry tomatoes, and vegan oatmeal/raisin cookies.

This course has been very popular. Most of the past students want to attend again and many students have been inquiring about the next session.
